I recently found this recipe by Food Dolls and I am glad I did!
This was just the sort of quick and nutritious inspiration I needed to change up my classic gyros this week. This has also been great as a leftover to much on through the week.

Original recipe called for the following ingredients
Chickpeas| Cucumber| Parsley| Olive Oil | Lemon Juice| Fetta Chees | Salt & Pepper
I always change things up and almost never measure, who really has time for that?
My list of ingredients was inspired by what was in my fridge at the time...
Chickpeas| Cucumber| Fine Chopped Red Bell Peppers & Onions| Olive Oil | Lemon Juice & zest| Fetta Chees
Basically chop and combine all ingredients into a bowl.....Brownie points if you prep it in the container you intend on storing it in!
